Merry Christmas!

Merry Christmas a couple days late! I thought I'd share a bit of what I did over Christmas. Our family escaped the cold in Arizona for a week! We had lot's of fun discovering new hiking trails, swimming, shopping, and of course, eating! I had planned on coming home with hundreds of photo's as usual, but was surprised only finding around 50; we had clearly been busy! My grandparents winter in AZ, so it was great to catch up with them as well, while playing games and hiking.

Ticket To Ride has become one of my family's favourite games this fall and we played many games on our trip. This game was recommended to us by a friend, but we had trouble finding it in stores. Eventually we gave up and just bought it on Amazon.  I love it and was surprised that it isn't really sold anywhere but online. There is two versions, the European and the US. While they are both super fun, the European is a harder version. Either of the versions make great gifts!

My grandma had bought me this card for Christmas and I love it! The little reindeer sticking out the side killed me! 

The inside was also great!

My birthday is Dec. 26th, and to celebrate, we bought cinnamon buns for breakfast!  My Dad and I are cinnamon bun fanatics and are on the constant search for a good one. This one from C3 Kitchen in the Scottsdale Quarter definitely fit the bill. In fact, it was placed as second on our list after Grounds For Coffee cinnamon buns in Vancouver, BC! The frosting was divine and the bun was soft and moist.

Midafternoon naps were definitely on Angus's schedule after getting home from doggie daycare. He was wiped!

My Dad had the wonderful idea of giving jars with an adjective for each night. It's a really thoughtful homemade gift!

Pumpkin Pie

Pumpkin pie has always been in demand around our house and for years, I searched for the perfect recipe, and I believe I have found it. This recipe has the perfect blend of spice and sweet and melts in your mouth. I will hopefully find time to follow this post up with my pie crust recipe as well, but here is the recipe for the filling! I really hope that you enjoy this recipe as much as I do!

The filling should be smooth by the time you are done with all the whisking.

Here it is before being baked, alongside an apple pie.

You can tell that I did my egg wash hurriedly as only parts of the crust are browned, oops!


Pumpkin Pie: adapted from Epicurious
makes 1 pie


3/4 cup sugar
1 T brown sugar
1 T cornstarch
2 t cinnamon
3/4 t ginger
1/2 t nutmeg
1/2 t cloves
1 16oz can pure pumpkin
3/4 cup whipping cream
1/2 cup sour cream
3 large eggs

Whisk first 6 ingredients until there are no lumps left. Add in pumpkin, cream, sour cream, and eggs and beat well to combine. Bake in a 9in pie crust until the filling cracks at the edges and still jiggles in the middle, you don't want to overbake it!

-You can adjust the spices to your liking
- I always do an egg wash on my pie crusts
- Make sure that there are absoluetely no lumps in the batter!
