Pumpkin Cookies

These pumpkin cookies are a staple in our house this fall! They have a nice texture, a good pumpkin flavor, and I love the pumpkin-chocolate mix! Enjoy!

Pumpkin Cookies
Adapted from Two Peas And Their Pod

2 cups all-purpose flour
1 t baking soda
1 1/2 t cinnamon
1/4 t ginger
1/8 t allspice
1/8 t cloves
1/8 t nutmeg
1 cup unsalted butter
1 cup brown sugar
1 cup white sugar
1 cup pumpkin puree (I make my own)
1 large egg
1 t vanilla
1 1/2 cups old-fashioned oats
1 cup semi-sweet chocolate chips

Preheat oven to 350 F.
In a medium bowl whisk flour, baking soda, and spices. Set aside.
In a large mixing bowl, beat butter and sugars until light and fluffy. Stir in pumpkin, egg, and vanilla. Gradually add flour mixture and stir until ingredients are well incorporated.
Stir in oats and chocolate chips. Also, feel free to add dried cranberries or pecans! Bake on a cookie sheet for 12 minutes or until light brown. Enjoy!
