Coco's Caramel

3/4 cup dark brown sugar
3/4 cup heavy cream
3 T dark corn syrup
3 T organic butter
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt

Bring the first three ingredients to a boil in a medium saucepan, whisking until the sugar dissolves. Boil caramel for 5 minutes whisking occasionally. Turn off heat; whisk in butter, vanilla and salt. Cool completely. Enjoy!
